The
Veiderhof
has
had
its
own
cheese
dairy
since
2010.
We
feed
our
animals
with
the
finest
mountain
hay.
The
milk
from
about
10
cows
is
processed
into
grey
cheese
and
farm
butter
every day.
Grey cheese:
Grey
cheese
is
a
typical
product
of
South
Tyrol.
In
the
past,
it
had
been
the
simple
food
of
the
poor,
but
nowadays,
the
gourmets
have
developed
a
taste
for
it.
The
grey
cheese,
a
lean
cheese,
is
gaining
more
and
more
popularity
because
it
is
low
in fat and lactose-free.
The white type:
Our
white
type
has
a
white
core
with
a
crumbly
structure.
Its
acidic
and
aromatic
flavour
is
perfect
for
flavouring
risotto
or
various types of pasta.
The seasoned type:
Our
seasoned
type
presents
itself
with
an
internal
core
with
white
spots.
Its
taste
is
characterized
by
a
slightly
spicy
and yeasty note.
Farmers butter:
Of course, a perfect breakfast is not
complete without the perfect butter.
